Learning some butchery skills and how to source great meat is a big step, but it's just the beginning. In this series we will focus on a recipe or meal, walking you through it step by step through prep to the final product. Along the way we will touch on techniques and methods that can be applied to lots of other recipes, leaving you with more confidence to make great meals with great meat, at home!
In this first installment, we show you how to make a rich, slow cooked ragu bolognese. We will talk about selecting the right meats, we'll grind some meat fresh, help you with your knife skills as we prep vegetables, and show you the tricks of timing, heat, and seasoning that make a bolognese really great.
We will end the class with a big bowl of pasta bolognese and a glass of wine. Participants will go home with a pint of bolognese, and a recipe to make it again themselves.
